1 Tablespoon Canola Oil

1 Onion, diced

3 Stalks Celery, diced

2 Bell Peppers, diced

1 Smoked Ham Hock

1 Sprig Thyme, picked and chopped

1/2 Cup Pink Beans

5 Cups Chicken Broth
Directions

Heat oil in large Dutch oven and sauté onion, celery and peppers until softened.

Add bay leaf, ham hock, thyme, rice and beans and toss to incorporate.

Cover with broth, stir and cover. Let simmer on low heat, stirring every 20 minutes or so, until rice and beans are tender.
