Kugel is a sweet baked noodle pudding or casserole, classic of Eastern European Jewish cuisine. This sweet version uses Unsweetened Pineapple Rings to create a natural fruit crust.

1 (8 Oz.) Package Wide Egg Noodles

6 Large Eggs, at room temperature

5 Tablespoons Unsalted Butter, melted

3/4 Cup White Sugar, divided

1 (8 Oz.) Can Crushed Pineapple With Juice

1 1/4 Teaspoons Vanilla Extract, Bourbon Madagascar

1 Teaspoon Ground Korintje Cinnamon

6 Unsweetened Dried Pineapple Rings, rehydrated

Maraschino Cherries, optional, for garnish

Preheat oven to 350°F.

Cook noodles in boiling, salted water just until softened, about 8 minutes (do not cook for full time instructed on package). Rinse to cool and drain.

Combine eggs with melted butter in large mixing bowl, then whisk in sugar, crushed pineapple with juice, vanilla and cinnamon. Stir in noodles, then spread into greased 9-inch by 13-inch baking dish.

Arrange rehydrated pineapple rings over top and place candied cherry in middle of each ring, if desired.

Transfer to oven and bake until golden brown and creamy, about 45 minutes.
