Makes 1 pie

  • 1 Prepared Pie Crust

  • 2 Cups Medium Pecan Pieces

  • 3 Large Eggs, beaten

  • 1/2 Cup White Sugar

  • 1/4 Cup Light Brown Sugar

  • 1 Cup Light Corn Syrup

  • 1/3 Cup Butter, melted

  • 1 Teaspoon Vanilla Extract

  • 3/4 Teaspoon Salt

  1. Heat an oven to 350° F

  2. Toast the pecans on a small sheet pan for 5-10 minutes, just enough to get them very hot. Set them aside to cool a little.

  3. Whisk the eggs with the sugars then add the salt, syrup and butter. Pour the pecans into the pie crust and the syrup slowly over the pecans. Cover the pie with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes until the center of the pie is just barely jiggling.

  4. Remove to cool a wire rack and cool to room temperature before cutting.
