Ingredients

1 Cup Pebble Beans

8 Cups Water

2/3 Cup Diced Green Bell Pepper

1/2 Cup (14 Oz.) Can Artichoke Hearts, drained and quartered

1/3 Cup Black Olives, chopped

1/4 Cup Red Onion, chopped

1/4 Cup Fresh Parsley, chopped

3/4 Teaspoon Basil Leaf

1/3 Cup Olive Oil

1/4 Cup Red Wine Vinegar
Directions

Soak beans overnight in cold water. Drain.

Place beans in large stock pot with 8 cups water, and bring to a boil. Reduce heat and simmer 1-1/2 hours, or until beans are tender. Drain beans and cool to room temperature.

Toss all ingredients together. Add salt and ground black pepper to taste. Refrigerate before serving.
