Pebble Bean and Artichoke Salad

  • 1 Cup Pebble Beans

  • 8 Cups Water

  • 2/3 Cup Diced Green Bell Pepper

  • 1/2 Cup (14 Oz.) Can Artichoke Hearts, drained and quartered

  • 1/3 Cup Black Olives, chopped

  • 1/4 Cup Red Onion, chopped

  • 1/4 Cup Fresh Parsley, chopped

  • 3/4 Teaspoon Basil Leaf

  • 1/3 Cup Olive Oil

  • 1/4 Cup Red Wine Vinegar

  • Fine Sea Salt

  • Fine Ground Black Pepper


  1. Soak beans overnight in cold water. Drain.

  2. Place beans in large stock pot with 8 cups water, and bring to a boil. Reduce heat and simmer 1-1/2 hours, or until beans are tender. Drain beans and cool to room temperature.

  3. Toss all ingredients together. Add salt and ground black pepper to taste. Refrigerate before serving.
