Ingredients
Makes 14 biscotti

1 Cup White Sugar

1/2 Cup Butter, softened

1 Teaspoon Vanilla Extract, Bourbon Madagascar

4 Medium Eggs, beaten

1 Cup Almond Meal

3 Cups All-Purpose Flour, plus more for dusting work surface

1 1/2 Teaspoons Baking Powder

1/2 Teaspoon Ground Cardamom

1/4 Teaspoon Kosher Sea Salt Flakes

1 1/2 Cups Raw Whole Almonds, coarsely chopped and toasted

1 1/2 Cups Dried Pears
Directions

Preheat oven to 350°F. Line baking sheet with parchment paper.

Combine sugar and butter in large mixing bowl, and mix with electric mixer on medium-high speed until creamy and well-combined. Add vanilla, eggs and almond meal, and beat on medium until incorporated.

Combine flour, baking powder, cardamom and salt in medium mixing bowl, and whisk to combine. Add dry mixture to wet, and stir just until incorporated. Stir in chopped almonds and pears.

Divide dough into two equal chunks and form into logs on well-floured work surface.

Transfer logs to prepared baking sheet, place in oven and bake 20 minutes, until firm and lightly browned. Cool on cooling rack for 10 minutes.

Cut biscotti on the diagonal into 3/4-inch-thick slices. Return slices to baking sheet, and continue baking 10 to 15 minutes longer, until biscotti reach desired crispness (keep in mind that they will crisp further once fully cooled). Remove from oven, and allow to cool completely on wire rack.
