Ingredients

2 Tablespoons Butter

1/4 Cup Onion, julienned

8 Cloves Garlic, chopped

1 Ounce Organic Hen Of The Woods Mushrooms, rehydrated, liquid reserved and strained

3 Tablespoons Sherry

1/4 Lemon, juiced and zested

1 Cup Heavy Cream

1/2 Cup Tomato, peeled, seeded and chopped

1 Pound Dried Pasta (Any Shape), cooked
Directions

Melt butter in large saucepan over medium-high heat. Add onion, and sauté until caramelized.

Add garlic, and cook just until softened and fragrant. Add mushrooms, reserved mushroom soaking liquid, sherry, lemon zest and lemon juice. Cook until reduced by half.

Add heavy cream and tomatoes. Cook until reduced to slightly thickened consistency.

Season to taste with salt and ground black pepper. Serve over cooked pasta.
