1/2 Cup Unsalted Butter, softened

2 Shallots, minced

3 Tablespoons Fresh Bread Crumbs

2 Teaspoons Green Peppercorns, coarsely ground

1 Teaspoon Lemon Zest

1/2 Teaspoon Prepared Horseradish

2 Teaspoons Lime Juice, fresh squeezed

1 1/2 Teaspoons Kosher Sea Salt Flakes, divided

1 Teaspoon Fine Ground Black Pepper

4 Filet Mignon Steaks, (2-inch thick)

Directions

Combine butter, shallots, bread crumbs, peppercorns, lemon zest, horseradish, 1/2 teaspoon salt and lime juice in bowl. Mash together with fork until well-combined. Turn out onto waxed paper, roll into even log and seal in plastic wrap. Refrigerate overnight.

Season filets with remaining salt and pepper.

Heat large skillet over medium-high heat. Add oil and swirl to coat pan. Add steaks, and cook to desired doneness (about 9 minutes per side for medium-rare). Transfer steaks to platter and rest (covered) for at least 5 minutes.

Serve each steak topped with about 1 tablespoon prepared butter (3 or 4 thin slices).
