  • 1 Cup Organic White Basmati Rice

  • 1 Tablespoon Olive Oil

  • 1 Small Onion, minced

  • 2 Cloves Of Garlic, minced

  • 1 1/2 Cups Water Or Broth

  • 1/4 Cup Shredded Carrots

  • 1/4 Cup Diced Dates

  • 1 2" Piece Of Fresh Ginger, grated

  • 2 Teaspoons Coarse Sea Salt

  • 2 Green Onions, chopped


  1. Place a 2 quart sauce pot over medium-high heat and add the oil, rice, onion and garlic.

  2. Fry for 1 minute while stirring and add the water and salt. Bring to a boil, cover and reduce the heat to simmer.

  3. Cook for 5 minutes and add the carrots, dates and grated ginger. Stir once and cover. Continue cooking for 8-10 minutes and set aside to rest for 5 minutes.

  4. Fluff the rice and garnish with chopped green onions.
