Makes 12 muffins


  1. Preheat oven to 400°F. Grease muffin tin with butter or cooking spray.

  2. Whisk together dry ingredients and orange zest in large bowl.

  3. Combine wet ingredients in separate medium bowl, and whisk until incorporated.

  4. Add wet ingredients to dry ingredients, and mix with wooden spoon until just blended. Do not over-mix.

  5. Pour batter into prepared muffin tins and bake for 15 to 20 minutes, or until golden brown.

  6. Let muffins cool for 10 minutes on cooling rack before serving.
