This nutrient-packed pilaf makes for a hearty side dish for roast chicken or grilled pork. It features our own Multi-Grain Blend, along with tender roasted acorn squash, smoky bacon and tart cranberries.

2 1/2 Cups Chicken Stock

8 Ounces Multi-Grain Blend

1 Acorn Squash, peeled, seeded and cubed

2 Tablespoons Canola Oil

2 Teaspoons Fresh Sage, chopped

2 Ounces Bacon, diced

1 Yellow Onion, diced

1/2 Cup Raw Pecan Halves, toasted

1/2 Cup Whole Dried Cranberries

Preheat oven to 400°F.

Bring chicken stock to a boil in large saucepan. Add Multi-Grain Blend to saucepan, reduce heat to low, cover and simmer until grains are tender, about 30 minutes. Remove saucepan from heat and let sit, covered, for at least 10 minutes.

Toss acorn squash with oil, sage and pinch of salt and pepper. Spread acorn squash on baking sheet. Roast for 5 to 6 minutes on each side, remove and cool.

Cook bacon in large non-stick skillet until crispy and fat has rendered. Add onion and cook until soft, about 5 minutes. Add pecans and cranberries and mix well. Add cooked Multi-Grain Blend and acorn squash to cranberry and pecan mixture. Stir well and serve immediately.
