2 Tablespoons Butter

1/4 Onion, diced

2 Celery Stalks, diced

1 Teaspoon Kosher Salt

1 Tablespoon Rubbed Sage

2/3 Cup Midnight Rice And Legume Blend

3 Cups Chicken Broth

1/2 Teaspoon Ground Black Pepper

8 Ounces Cooked Pulled Chicken

1 Cup Fresh Kale, rinsed, torn pieces
Directions

Melt butter in medium saucepan over medium heat. Add onion, celery and salt, and cook for 5 minutes.

Add sage and Midnight Blend and stir to combine. Cook rice for 3 minutes before adding chicken broth. Bring to a simmer, turn heat to low, cover and cook for 25 minutes. Remove from heat.

On top of the rice place pulled chicken and torn kale. Allow this to stand covered, for 5-8 minutes, then fluff with fork and season with freshly ground black pepper.
