1 Tablespoon Olive Oil

5 Green Onions, White Parts Only, chopped

4 Garlic Cloves, crushed

2 1/4 Cups Water

1 1/2 Cups Tri-Colored Middle Eastern Couscous

1 Cup Whole Dried Cranberries

3/4 Cup Diced Dates

1/2 Cup Golden Raisins

1 Mango, peeled and chopped

1/2 Cup Sliced Almonds

1 Tablespoon Fresh Cilantro, chopped
Directions

Heat olive oil in large saucepan over medium-high heat. Add onion and garlic and sauté until fragrant, 1 to 2 minutes.

Add water to saucepan and bring to a boil. Add couscous, reduce heat to low, cover and simmer until water is absorbed, stirring occasionally.

When couscous is tender, add dried fruits and stir in gently. Stir in mango and sprinkle in sliced almonds and chopped cilantro. Taste and adjust seasoning with salt.
