1 Teaspoon Fine Sea Salt

2 Cups Middle Eastern Couscous

2 Lemons, juiced

1 Tablespoon Honey

1/4 Cup Olive Oil

1 Large Tomato, seeded and diced

1 Cup Chopped Fresh Spinach

1 Cup Chopped Fresh Romain Lettuce

1/4 Cup Premium Raw Pine Nuts, toasted

1/2 Cup Chopped Canned Artichoke Hearts

1/4 Cup Crumbled Feta Cheese

Directions

Bring water to a boil in medium pot with 1 teaspoon salt. Stir in Mediterranean Couscous Blend and reduce heat to maintain a low boil. Cook until tender, about 13 minutes. Drain well, then spread onto sheet pan to cool to room temperature.

Mix lemon juice with honey in serving bowl and slowly whisk in olive oil. Add cooled couscous and remaining ingredients, and toss gently to combine. Refrigerate until serving. Serve cold.
