Lemon Gumdrops

Ingredients

Makes 2 cups

  • 2 Tablespoons Plain Gelatin

  • 1 1/4 Cups Water, cold, divided

  • 2 Cups Sugar

  • 3 Tablespoons Lemon Powder

  • 2 Dashes Yellow Food Coloring

Directions

  1. Line baking dish with aluminum foil and lightly coat foil with nonstick cooking spray. Set aside.

  2. Place gelatin in bowl with 1/2 cup water to soften.

  3. Combine remaining 3/4 cup water and sugar in saucepan and simmer over medium heat until sugar dissolves.

  4. Pour gelatin into saucepan with hot syrup and bring to a boil over medium-high heat. Cook for 15 minutes, stirring constantly.

  5. Stir in 2 tablespoons Lemon Powder and 2 drops food coloring, and pour mixture into foil-wrapped pan. Transfer to refrigerator and chill for at least 12 hours.

  6. Unmold gelatin and cut into desired shapes. Roll gumdrops in remaining tablespoon Lemon Powder.
