Our Marash Chile Flakes play a starring role in this classic Turkish lamb meatball (or kofta) dish, appearing in both the meatballs and the accompanying yogurt sauce. Lending a mild heat and slightly citrusy chile flavor, the flakes are a pleasing addition to this traditional recipe.

Ingredients

  • 1 1/4 Cups Plain Yogurt

  • 1 Tablespoon Fresh Mint, chopped

  • 2 Cloves Garlic, minced and divided

  • 1 Tablespoon Marash Chile Flake, divided

  • 1 1/4 Teaspoons Fine Sea Salt, divided

  • 1 Pound Ground Lamb

  • 1 Small Onion, chopped

  • 1/3 Cup Fresh Parsley, chopped

  • 1/2 Teaspoon Ground Cumin

  • 1 1/2 Tablespoons Olive Oil

Directions

  1. Combine yogurt, mint, half of garlic, half of chile flakes and 1/4 teaspoon salt in small bowl. Stir to combine; cover and refrigerate.

  2. Combine lamb, remaining garlic, onion, parsley, cumin, remaining chile flakes and remaining salt in large bowl. Mix well, then roll into 12 small oblong meatballs.

  3. Heat olive oil in large skillet set over medium-high heat. Add kofte, and cook for 2 minutes, until golden brown. Flip, and cook additional 6 to 7 minutes on other side. Kofte should be cooked through, but still moist.

  4. Remove kofte from heat and serve with yogurt sauce.
