1/4 Cup Butter

1 Whole Chicken, cut into 8 pieces

2 Teaspoons Kosher Sea Salt Flakes

1 Teaspoon Ground Black Peppercorns Dustless

1 Large Onion, chopped

6 Garlic Cloves, minced

1/4 Cup Tomato Puree
-
14 Fluid Ounces Canned Chopped Tomatoes

3 Medium Carrots, grated

4 Cups Chicken Stock, hot

1 Tablespoon Kabsa Spice Blend

2 1/4 Cups Basmati Rice

1/4 Cup Golden Raisins
-
1/4 Cup Natural Sliced Toasted Almonds
Directions

Melt butter in large skillet over medium heat. Season chicken pieces with salt and pepper and add to pan. Sauté until well browned on both sides, but not completely cooked, about 6 to 8 minutes per side. Remove chicken and set aside.

Add onions and garlic to skillet and cook until onion is softened, about 5 minutes.

Add tomato purée, chopped tomatoes, carrots, chicken stock and Kabsa Spice Blend. Bring to a boil over high heat. Add rice, cover, reduce heat to low and simmer about 10 minutes.

Return chicken to pan and cover again. Cook for additional 10 to 15 minutes or until thickest part of chicken thigh reads 165°F on meat thermometer.

Garnish with raisins and almonds and serve.
