Job’s Tears and Chicken Pilaf

Makes 4 servings


  1. Place mushrooms in small heatproof bowl or cup. Cover with hot water and let soak 20 minutes or until soft.

  2. Heat olive oil in large skillet. Add chicken and cook, stirring frequently, until no longer pink. Add carrots, celery, red onion and Job’s tears. Sprinkle with Poultry Seasoning and minced garlic, and stir to combine.

  3. Drain mushrooms, reserving soaking liquid, and add mushrooms to skillet. Pour in reserved soaking liquid, taking care not to add any grit that may have settled in bottom of bowl. Stir in chicken stock.

  4. Bring to boil over medium-high heat. Reduce heat to a simmer, cover and cook 30 minutes or until Job’s tears are tender and chicken is cooked through.
