Ingredients

4 Cups Water

2 Cups Incan Quinoa Blend

1 3/4 Cups Almond Milk, divided

1/2 Cup Granulated Brown Sugar

2 Cups Dried Pineapple Rings

1 Cup Dried Diced Mango, sliced

3/4 Cup Whole Dried Cranberries

3/4 Cup Raw English Walnuts, chopped and toasted
Directions

Bring water to boil in saucepan over high heat. Add cinnamon stick and stir in Incan Quinoa Blend. Return to boil, then reduce heat and simmer until quinoa is tender, about 12 minutes. Fluff quinoa with fork.

Stir in 1 cup almond milk and brown sugar. Cover, remove from heat and let stand for 5 minutes.

Remove and discard cinnamon stick, then divide quinoa among 6 serving bowls. Divide remaining almond milk, mango, pineapple chunks, cranberries and walnuts and use to top bowls of porridge. Serve hot.
