1 Standing Rib Roast (4 Bone Minimum)

2 Tablespoons Dijon Mustard

1 Tablespoon Vegetable Oil

1 Tablespoon Smoked Fine Sea Salt

1 Tablespoon Smoked Ground Black Peppercorns

1 Tablespoon Smoked Sweet Paprika

1 Tablespoon Thyme Leaf

1 Tablespoon Parsley Flakes

Preheat oven to 200°F.

Combine mustard, oil, salt, ground peppercorns, paprika, thyme and parsley in small bowl to make paste. Rub paste generously over entire rib roast. If bones have been exposed and cleaned, wrap them in aluminum foil to preserve appearance.

Place roast on rack inside sheet pan, transfer to oven and cook on lowest rack. Consider 15 minutes of cook time per pound of meat, aiming for internal temperature of at least 125°F. This is very rare, so adjust cook time accordingly for each temperature increase.

Allow roast to rest for at least 10 minutes after removing from oven and before carving.
