Directions

  1. Preheat oven to 325°F. Line 8-inch square baking pan with foil, and lightly spray with nonstick cooking spray.

  2. Combine Health Club Fruit Blend, almonds, cashews, pumpkin seeds and quinoa in medium bowl, tossing to incorporate. Sprinkle with salt and add brown rice syrup, stirring to evenly coat.

  3. Scrape mixture into prepared pan. Tear off piece of foil slightly larger than size of pan, and spray one side with nonstick cooking spray. Using sprayed side, press mixture into even layer in pan. Leave foil in place after pressing.

  4. Transfer pan to oven and bake for 18 minutes, then remove from oven and transfer pan to cooling rack for 20 minutes. At this stage, the bars should be partially set, but still clinging to foil.

  5. Use foil overhang to lift bars from pan. Cut into 10 bars, but do not remove foil backing. Once bars have cooled completely, they will lift easily off of foil backing without sticking.

  6. Wrap bars in wax or parchment paper, and store in airtight container for up to 2 weeks.
