Ingredients

2 Cups Water

3 1/2 Tablespoons Corn Starch

2 Cups Coconut Milk Powder

1/4 Cup Granulated Sugar

1/4 Cup Fancy Shredded Coconut
Directions

Pour 1-1/2 cups water in medium saucepan and bring to a simmer over low heat. Mix remaining 1/2 cup of water with cornstarch in small bowl until dissolved.

Add Coconut Milk Powder and sugar to water, and whisk until sugar dissolves. Keep coconut milk at a low simmer or mixture can break. Add cornstarch slurry to saucepan and whisk until very thick.

Pour mixture into two ramekins or bowls and chill in refrigerator for at least 4 hours.

Garnish with shredded coconut and serve.
