Ingredients

Makes 1/2 cup

  • 1 Teaspoon Olive Oil

  • 1 Teaspoon Fresh Lemon Zest

  • 1 Teaspoon Chopped Garlic

  • 1 Teaspoon Chopped Shallot

  • 1/2 Teaspoon Ground Green Peppercorns

  • 1/4 Cup Red Wine

  • 1 Cup Stock (Veal, Beef Or Chicken)

  • 3 Tablespoons Butter

  • 1/2 Teaspoon Kosher Sea Salt Flakes

Directions

  1. Place small sauce pot over medium heat. Add olive oil, lemon zest, garlic, shallot and peppercorns. Cook, stirring, for 1 minute.

  2. Add red wine and cook until wine is nearly evaporated.

  3. Add stock and cook to reduce volume by two-thirds.

  4. Whisk in butter, 1 tablespoon at a time, and add salt.
