1 Teaspoon Olive Oil

1 Teaspoon Fresh Lemon Zest

1 Teaspoon Chopped Garlic

1 Teaspoon Chopped Shallot

1/2 Teaspoon Ground Green Peppercorns

1/4 Cup Red Wine

1 Cup Stock (Veal, Beef Or Chicken)

3 Tablespoons Butter

1/2 Teaspoon Kosher Sea Salt Flakes
Directions

Place small sauce pot over medium heat. Add olive oil, lemon zest, garlic, shallot and peppercorns. Cook, stirring, for 1 minute.

Add red wine and cook until wine is nearly evaporated.

Add stock and cook to reduce volume by two-thirds.

Whisk in butter, 1 tablespoon at a time, and add salt.
