Ingredients

4 Cups Water

2 Cups Pasta Legume Gourmet Blend

2 Tablespoons Butter

1 Small Onion, minced

1 Teaspoon Thyme Leaves, chopped

2 Teaspoons Kosher Sea Salt Flakes, divided

1 Teaspoon Ground White Pepper

4 Asparagus Spears, chopped

2 Garlic Clove, minced

1 Small Carrot, peeled and grated

1 Cup Chopped Spinach

1 Cup Raw Pecan Halves, toasted and chopped

1 Cup Natural Seedless Raisins
Directions

Bring water to boil with 1 teaspoon salt in large pot. Add Gourmet Pasta Legume Blend and simmer for 14 minutes. Strain.

Add butter to same pot and melt over medium-high heat. Add onions, and cook for 6 minutes before adding thyme. Place pasta blend back in pot, and season with remaining salt and ground white pepper. Stir to coat blend in butter and onions.

Remove from stove and cover blend with vegetables, nuts and raisins. Place lid on top of pot and let pilaf rest for 10 minutes. Fluff with fork and mix to incorporate vegetables, nuts and raisins. Serve warm.
