Ingredients

2 Tablespoons Olive Oil

1 Tablespoon Butter

1/2 Cup Onion, diced

1 Cup Scarlet Rice Blend

2 Cups Unsalted Chicken Or Vegetable Stock

1/2 Teaspoon Kosher Sea Salt Flakes

3/4 Cup Fruit Fusion

1/2 Cup Chopped Pistachios
Directions

Heat oil and butter together over medium heat in large saucepan. Add onion and cinnamon stick, and cook, stirring, until onion is soft and translucent and cinnamon stick is fragrant, about 5 minutes.

Add Scarlet Rice Blend, and cook, stirring constantly, until rice grains are lightly toasted, translucent around edges and opaque in middle, about 3 minutes.

Add stock and salt, and bring to a boil over high heat. Reduce heat to low to maintain a simmer, and cover pot. Cook for 35 minutes.

Briefly remove lid, and add Fruit Fusion, without stirring rice. Replace lid, and cook another 10 to 15 minutes, until all liquid has been absorbed. Remove pan from heat and let stand, covered, for 5 minutes. Fluff with fork, incorporating fruit.

Add chopped pistachios, and stir to incorporate. Remove cinnamon stick, adjust seasoning if necessary and serve.
