Ingredients

1 Cup Green Lentils

1/4 Cup Lemon Juice

2 Teaspoons Ground Cumin

1/4 Teaspoon Ground Allspice

Ground Black Peppercorns Dustless, freshly ground

2 Tablespoons Olive Oil

1 Teaspoon Fresh Mint, chopped

1 Teaspoon Fresh Flat Leaf Parsley, chopped

1 Tablespoon Fresh Thyme Leaves, chopped

2 Tablespoons Butter

1 Head Fresh Garlic (At Least 10 Cloves), peeled and minced
Directions

Carefully sort lentils and rinse under cold running water.

Add lentils to pot with plenty of fresh water and bring to a boil. Reduce heat and simmer until all lentils are tender, about 25 minutes. Drain and set aside.

Whisk together lemon juice, cumin, allspice with salt and pepper to taste in small bowl. Slowly whisk in olive oil. Stir in mint, parsley and thyme. Set aside.

Heat butter in large sauté pan over medium-low heat and sauté garlic just until it begins to brown, about 7 minutes.

Add lentils and herb dressing and cook just until heated through, stirring so lentils are evenly coated. Serve warm or at room temperature.
