1/4 Cup Daikon Radish Seeds

1 Tablespoon Rice Wine Vinegar

1 Teaspoon White Sugar

1/2 Teaspoon Fine Sea Salt

2 Tablespoons Sesame Oil

4 Small Carrots, peeled and shredded

2 Scallions, diced
Directions

Soak Daikon Radish Seeds in water for at least 4 hours or overnight.

Whisk vinegar with sugar and salt in medium bowl until dissolved. Slowly whisk in oil.

Pour vinaigrette over shredded carrots and toss in Daikon Radish Seeds and scallions. Chill until ready to consume. Serve sprinkled with sesame seeds, chopped cilantro and crushed red pepper.
