1/2 Pound Button Mushrooms

1 Small Onion

1 Tablespoon Butter

1 Tablespoon Flour

1 Tablespoon Mushroom Blend Powder

1 Teaspoon Kosher Sea Salt Flakes

1/2 Teaspoon Ground Thyme

1/2 Teaspoon Ground White Pepper

2 Cups Milk

2 Cups Broth Or Water

Fresh Chopped Parsley, for garnish

Rinse mushrooms by soaking in large bowl of water. Remove and chop mushrooms into small pieces.

Chop onion into small pieces.

Place 2-quart pot over medium heat and add butter. When butter begins to foam, add onion and cook for 5 minutes.

Add flour, Mushroom Blend Powder, thyme, salt and ground white pepper to pot and stir. Continue stirring until mixture browns just a little, then add liquids.

Add mushrooms and cover pot. Allow soup to simmer for 20 minutes.

Purée soup with emulsion blender or standing blender. Adjust salt as needed and garnish with parsley.
