Makes 3 servings

  • 1 Pound Chicken Breast

  • 4 Tablespoons Butter

  • 4 Tablespoons Flour

  • 3 Cups Chicken Broth

  • 1 Cup Cajun Dirty Rice, cooked

  • Salt And Ground Black Pepper


  1. Dice chicken breast into 1-inch pieces.

  2. Heat 2-quart pot over medium heat, and add butter. When butter bubbles, add chicken pieces and cook for 5 minutes before stirring.

  3. Stir chicken around pot to achieve brown color and cook for another 6 to 7 minutes.

  4. Add flour, stirring into butter and chicken with wooden spoon. When paste has formed, cook for 1 minute before adding chicken broth. Bring to a simmer. As soup thickens, add Cajun Dirty Rice.

  5. Season with salt and ground black pepper.
