Classically prepared couscous can be used as a base for so many dishes — especially roasted meats, poultry and fish. This recipe stays true to its North African roots, combining aromatic cinnamon and nutmeg to create a deliciously fragrant dish.

Ingredients

1 1/4 Cups Chicken Stock

1 Small Onion, finely chopped

2 Tablespoons Butter

1/2 Teaspoon Kosher Sea Salt Flakes

1/4 Teaspoon 4'' Cinnamon Stick

1/4 Teaspoon Ground Nutmeg

1 Cup Couscous

1 Tablespoon Fresh Mint Leaves, chiffonade

Black Peppercorns, freshly ground
Directions

Combine stock, onion, butter, salt, cinnamon stick and nutmeg in medium saucepan over medium heat. Simmer for 15 minutes.

Stir in couscous. Cover and remove from heat. Let stand 10 to 15 minutes or until couscous absorbs liquid.

Sprinkle with mint, then fluff with fork, incorporating mint. Remove and discard cinnamon stick. Season to taste with black pepper. Serve immediately or reserve and serve room temperature.
