1/2 Pound Ground Pork

1 Small Yellow Onion, diced

1 Tablespoon Neutral Cooking Oil

2 Tablespoons Chorizo Seasoning

1 Teaspoon Kosher Sea Salt Flakes

1 Pound Chihuahua Cheese, shredded

1/2 Cup Chopped Tomatoes

1/4 Cup Chopped Green Onions
Directions

Preheat oven to 400°F.

Place medium skillet over high heat and add oil. Add the ground pork and onions. Cook while breaking pork into small pieces with wooden spoon .

Cook until the mixture begins to fry and brown a little.

Add Chorizo Spice and salt to pork and continue cooking for 5 minutes more. Pour chorizo into 7-inch by 11-inch oven-safe serving dish. Cover chorizo with shredded cheese and place in oven.

Bake for 5 to 6 minutes until cheese is melted and hot.

Garnish top of fundido with diced tomatoes, green onions and cilantro. Serve with chips or bread.
