1 Cup Peeled Hazelnuts, toasted

8 Ounces Semi-Sweet Chocolate, melted

3 Tablespoons White Sugar

3 Tablespoons Cocoa Powder

1 Tablespoon Butter, melted

1 Tablespoon Fine Sea Salt

1/2 Teaspoon Vanilla Extract, Bourbon Madagascar

Place the hazelnuts in a food processor or high-speed blender and blend for 1 minute. Stop to scrape the hopper and repeat until the hazelnuts are a paste. Add the sugar and blend again.

Add the cocoa powder, vanilla and salt. Blend until the paste is very thick but also smooth. Add the melted chocolate. This will warm the hazelnut paste and thin it out. Allow the paste to blend for 2-3 minutes and remove to strain through a sieve or store as is in an airtight jar.
