Makes 1 round loaf

  • 3 Cups Unbleached All-Purpose Flour

  • 1/2 Cup White Sugar, plus 2 tablespoons

  • 2 Teaspoons Kosher Sea Salt Flakes

  • 1/2 Teaspoon Ground Korintje Cinnamon

  • 2 Teaspoons Baking Powder

  • 1/2 Teaspoon Baking Soda

  • 6 Tablespoons Chilled Unsalted Butter, cut into cubes

  • 6 Ounces Bittersweet Or Semisweet Chocolate, cut into cubes

  • 6 Ounces Diced Orange Peel

  • 1 1/4 Cups Buttermilk

  • 1 Large Egg

  1. Preheat oven to 350°F. Line baking sheet with parchment paper.

  2. Mix flour, sugar, salt, cinnamon, baking powder and baking soda in large bowl to combine. Add butter and, using hands, mix until dough resembles coarse meal. Add chocolate and orange peel and stir to combine.

  3. Whisk buttermilk and egg together in medium bowl. Add to dry ingredients, mixing just until combined.

  4. Turn out onto floured work surface and knead just until dough comes together, about 5 turns. Shape dough into 6-1/2-inch round loaf. Transfer to baking sheet and make deep crosshatch slashes on top of loaf.

  5. Transfer to oven to bake until brown, firm and toothpick inserted into center comes out clean, about 1 hour 10 minutes total. Transfer to wire rack to cool completely.
