2 1/2 Pounds Potatoes, peeled and cut into 1"-1 1/2" pieces

3 Egg Yolks

1/4 Cup Unsalted Butter

1/4 Cup Heavy Whipping Cream

1 Teaspoon Kosher Sea Salt Flakes

1/2 Teaspoon Ground White Pepper

2 Teaspoons Chive Powder
Directions

Preheat oven to 425°F.

Cover potatoes with cold water in pot and bring to a boil, then reduce heat to a simmer. When potatoes are tender, about 15 to 20 minutes, strain and let rest for 5 minutes to dry.

Whisk egg yolks together in small bowl, then add cream and whisk until smooth. Use food mill or food ricer to purée potatoes in separate medium bowl.

Fold butter, salt, white pepper and Chive Powder into potatoes. Add egg yolk and cream mixture and gently fold in, being careful not to over mix.

Line baking sheet with parchment or wax paper. Use piping bag to make puffs of potatoes on pan, each about 2 inches in diameter. Bake potatoes for 8 minutes or until golden brown.
