Chipotle Cheese Slices

Ingredients

Makes 1 pound

  • 12 Ounces Monterey Jack Cheese, grated

  • 4 Ounces Cheddar Cheese, grated

  • 4 Ounces Evaporated Milk

  • 1 Tablespoon Toasted Chipotle Flakes

  • 1 Tablespoon Vinegar

  • 1 Tablespoon Powdered Gelatin

  • 1 Teaspoon Granulated Garlic

Directions

  1. Spray the inside of a bread loaf pan and line with plastic wrap. Set aside.

  2. In a small bowl or cup, sprinkle gelatin over vinegar and let sit for 1 minute. Meanwhile, place a small saucepan over medium heat and add evaporated milk, stirring frequently until milk comes to a simmer. Add the gelatin mixture and stir until melted.

  3. Add cheeses a handful at a time, whisking to incorporate before adding more. Add chile flakes and granulated garlic to pan and whisk to combine. Reduce heat to low and continue to whisk until mixture is consistently smooth and creamy.

  4. Remove from heat and process with an immersion blender or food processor. Blend cheese for 30 seconds.

  5. Pour mixture into prepared loaf pan. Fold overhanging plastic to cover, or cover with another plastic sheet. Transfer to refrigerator and allow to cool overnight.

  6. When cheese has cooled, unmold from pan and remove plastic wrap. Use cheese slicing knife, vegetable peeler or very sharp knife to cut slices to desired thickness. Store cheese slices in a sealed container in refrigerator for up to 3 weeks.
