Ingredients

1/2 Pound Black Bean Orzo, uncooked

3 Tablespoons Lime Juice

1 Tablespoon Honey

2 Cloves Garlic, chopped

1 Chipotle In Adobo, 1 chile, chopped

1 Fresh Serrano Chile, seeded and chopped

1 Teaspoon Ground Cumin

2/3 Cup Olive Oil

2 Cups Black Beans , cooked and rinsed

1 Cup Fresh Or Frozen Corn Kernels

1 Red Bell Pepper, finely diced

3 Scallions, thinly sliced

1/3 Cup Fresh Cilantro, chopped
Directions

Bring large pot of salted water to a boil, and add orzo. Cook until al dente, about 12 minutes. Drain and rinse under cold water.

While orzo cooks, combine lime juice, honey, garlic, chiles and cumin in food processor or blender. Pulse a few times to combine. With machine running, slowly stream in oil until emulsified. Season to taste with salt and black pepper.

Toss orzo with beans, corn, bell pepper, scallions, cilantro and dressing.
