8 Chicken Thigh, Boneless, Skinless

2 Lemon, Juiced

1/2 Cup Oil, Olive

1/2 Cup Shawarma Seasoning

1 Red Onion , Sliced

1 Pinch Kosher Sea Salt Flakes, To taste

1 Pinch Fine Ground Black Pepper, To taste

In a large bowl combine the lemon juice, olive oil, shawarma seasoning, and onion. Place the chicken in the bowl and thoroughly coat. Place the chicken in the fried to marinate for 4-12 hours.

After marinating, pre-heat an oven to 425° F. Lay the chicken and onions out on a lined and oiled sheet tray.

Roast the for 30-40 minutes or until the internal temperature reaches 165° F and the edges are brown and crispy. Pull the chicken to rest for a minimum of 10 minutes, then slice.

Serve with pita, tomatoes, cucumbers, tzatziki, and the roasted onions.
