Short grain brown rice is the same plump tender grain used for rice puddings by chefs around the world with the added benefit of high fiber. Keep it healthy with honey and dried fruit in place of sugar. Finish with fresh fruits for an elegant presentation.

1 Cup Calrose Brown Rice

Water

1 1/2 Teaspoons Kosher Sea Salt Flakes

4 Cups Whole Milk

1/3 Cup Honey

1 Teaspoon Vanilla Extract, Bourbon Madagascar

1 Teaspoon Ground Korintje Cinnamon

1/2 Teaspoon Ginger Powder

1/2 Cup Dried Blueberries, or raisins, dates, apricots
Directions

Add rice, water and 1 teaspoon of salt to a small pot. Bring to a boil, cover and simmer for 40 minutes.

Remove from the heat and set aside covered for 10 minutes.

Return the pot to a medium heat and add the remaining ingredients with half teaspoon of salt.

Simmer until the milk is mostly absorbed, about 30 minutes.
