Classic broccoli and cheddar soup is made easy with our dried Broccoli Florets. The extra vegetables add depth of flavor and extra texture, but the taste is pure broccoli.

Broccoli and Cheddar Soup

Ingredients

Makes 3 servings

  • 2 Tablespoons Butter

  • 1 1/2 Cups Broccoli Florets, divided

  • 1/2 Small Onion, minced

  • 1 Celery Stalk, chopped small

  • 1/2 Small Carrot, peeled and chopped small

  • 1/2 Teaspoon Coarse Sea Salt

  • 1/2 Teaspoon Black Peppercorns, ground

  • 2 Tablespoons Flour

  • 1 Quart Vegetable Broth

  • 1 Cup Cheddar Cheese, shredded

Directions

  1. Melt butter in large pot over medium heat. Add onion, celery, carrot, 1 cup broccoli florets, salt and pepper. Cover and cook for 8 to 10 minutes, or until carrots are soft.

  2. Add flour and stir to combine for 1 minute. Add vegetable broth, 1 cup at a time, whisking constantly until soup is thickened.

  3. Using an immersion blender or blender, process soup until smooth and return to pot.

  4. Over lowest heat, add cheese, one small handful at a time, stirring until melted. Add remaining broccoli florets and let warm.

  5. Serve with extra cheese for garnish.
