Ingredients

1 Tablespoon Vanilla Extract, Bourbon Madagascar

1 Teaspoon Baking Soda

1 Cup White Sugar

1/2 Cup Light Corn Syrup

1/4 Cup Water

1 Tablespoon Bourbon Or Whiskey

1 Tablespoon Unsalted Butter, room temperature
Directions

Combine vanilla and baking soda in small bowl. Reserve.

Line large baking sheet with parchment paper and spray with cooking spray.

Attach candy thermometer to side of medium saucepan, but do not let it touch bottom of pan. Add sugar, granulated pumpkin seeds, corn syrup and water and stir with wooden spoon over medium heat until dissolved. Cook untouched until thermometer registers 285°F.

Add pumpkin seeds and cook, stirring constantly, so seeds will not stick to bottom of pan.

Remove from heat and add vanilla mixture, bourbon and butter. Stir to combine.

Pour onto prepared baking sheet and spread into even layer with spatula. Let cool until hardened. Break into pieces. Store in airtight container for up to a week.
