1 Cup Porcini Orzo

1 Teaspoon Kosher Sea Salt Flakes

1/2 Cup Porcini, Shake, Extra

2 Tablespoons Butter

2 Tablespoons Flour

1 1/2 Cups Milk

1/2 Cup Parmesan Cheese , divided

1 Ounce Blue Cheese, crumbled

1 Ounce Goat Cheese

1 Tablespoon Minced Chives

2 Tablespoons Panko Bread Crumbs

Salt And Ground Black Pepper

Preheat oven to 400°F.

Add 1 cup of orzo to a large pot of boiling water with 1 teaspoon of salt and 1 teaspoon of neutral cooking oil. Cook for 10-12 minutes until al dente and strain. Rinse with cold water to cool and set aside.

Soak Porcini Shake in 1 cup boiling water. Set aside.

Melt butter in pot over medium heat. Add flour and stir until blonde roux is formed. Slowly add milk, whisking continuously. When mixture is thick, slowly whisk in cheeses (using only half of Parmesan), one at a time, whisking until incorporated before adding another.

Fold orzo into cheese sauce with chives, adding more milk if needed to maintain sauce-like texture.

Pour orzo mixture into oven-safe dish and top with remaining Parmesan and panko crumbs. Bake for about 6 minutes or until golden and bubbling. Serve immediately.
