Ingredients

1 Tablespoon Alfalfa Seed

Cool (60 To 70°F) Water

1 Large Ripe Avocado, pitted and peeled

1 Tablespoon Lemon Juice

4 Slices Good-Quality Multigrain Bread

Crushed Red Pepper, (optional)
Directions

Place seeds in 1-pint mason jar, and cover with a few inches of cool water. Cover top of jar with cheese cloth, and secure with rubber band. Soak seeds overnight, then drain water through cheese cloth.

Store seeds away from direct sunlight, at room temperature, for 3 days. Rinse seeds morning and evening with cool water by adding some water to jar through cheesecloth, swishing seeds around and draining.

After 3 days, white sprouts will have appeared. Move jar to sunlit place to encourage sprouts to green up, continuing to rinse and swish twice a day until sprouts have grown to desired size, generally within 5 to 6 days.

Remove cheesecloth, cover mason jar with lid and refrigerate until ready to use.

To assemble avocado toast, mash avocado with lemon juice and pinch of sea salt. Toast bread, and top each piece of toast with one quarter of mashed avocado. Sprinkle with coarse sea salt and crushed red pepper (if desired), and top with alfalfa sprouts.
