1/2 Cup Diced Green Anaheim Chiles

1 Tablespoon Butter

3 Pear, peeled and finely diced

1/2 Teaspoon Organic Cumin Seed, crushed

1 Teaspoon Crushed Epazote

1/2 Teaspoon Kosher Sea Salt Flakes

1/2 Cup Granulated Sugar

1/2 Cup Honey
-
1 Cup Water

3 Tablespoons Lime Juice

1 (3 Ounce) Package Pectin Powder
Directions

Soak Diced Green Anaheim Chiles in water and set aside.

Place 1-quart saucepan over high heat and add butter, pears, cumin, epazote and salt. Cook for 5 minutes, stirring to prevent burning. Add water and chiles plus sugar and honey. Bring to a simmer.

Combine lime juice and pectin powder in small bowl. Stir to thoroughly dissolve powder and add to simmering pot. Bring to a boil for 5 minutes, then remove from heat.

Place jam into sterilized jars and refrigerate.
