Al Pastor Tacos with Pineapple Salsa

Ingredients

  • 3 Pounds Pork Butt

  • 1/2 Cup Al Pastor Seasoning

  • 3 Cups Pineapple , Large Dice

  • 1 Onion, Spanish , Sliced

  • 4 Garlic Cloves

Directions

  1. Rub the outside of the pork butt with prepared Al Pastor Seasoning. Refrigerate the rubbed pork butt for two hours to develop flavors.

  2. Preheat an oven to 350°F

  3. In a roasting pan place the pork butt, pineapple, onion, and garlic. Cover with foil and bake for 1.5 hours. Remove the foil and bake for an additional 30 minutes until the outside of the pork has a nice caramelized color.

  4. After the desired color is achieved remove the pork and rest for 10 minutes. While the pork is resting transfer the contents of the roasting pan to a food processor and pulse the contents to a desired texture. Season the Al pastor pineapple salsa with salt and pepper to taste

  5. Slice the pork very thin against the grain. Serve the sliced pork on a warmed tortilla topped with the pineapple salsa.
