3 Cups Adzuki Beans, cooked and drained, cooking liquid reserved

1 Cup Dried Diced Apples

1/2 Cup Thompson Seedless Select Raisins

1/4 Cup Honey

1/2 Teaspoon Vietnamese Ground Cinnamon

1/2 Lemon, juiced

6 Cups Vanilla Ice Cream
Directions

Place beans in large saucepan and set aside.

Combine fruit and 1-1/2 cups bean cooking liquid in separate bowl, and let stand for 15 minutes.

Add fruit, cinnamon and honey to beans and simmer until reduced by one-third.

Stir in lemon juice and spoon over vanilla ice cream.
