Called "tomate verde" in Mexico, which means green tomato, the tomatillo is considered a staple in Mexican cooking, especially in the tangy salsa verde. It is also called the husk cherry, husk tomato or jamberry.
The tomatillo is a member of the nightshade family, related to tomatoes and gooseberries, and grows throughout the Western Hemisphere. The fruit of the tomatillo is picked while it is still green. It is about the size of a large cherry tomato, although the inside is white and meatier than a traditional tomato. It grows on a vine, and is enclosed in a papery husk. The flavor of the fully ripe tomatillo remains tart, and adds an unusual taste to salsas.
