Ginger (Zingiber officinale) is the root of a perennial reed-like plant that is cultivated all over Asia. It is valued for its spicy, flavorful roots, which are a staple spice in most Asian cuisines. It has a hot and spicy flavor that is both refreshing and sharp.
Balinese sea salt is produced in coastal regions around the island of Bali. In the early morning hours, farmers rake the sand gently and sprinkle it lightly with water.
Soon a thin crust forms which is gently scooped up and tipped into the first of a series of coconut trunks. The filtering journey ends with a pool of concentrated salt water. The thick salt water is collected and poured into open-air trays and left to evaporate in the sun. Once the water has evaporated, the salt is crushed and ground.
