Quatre Spices is a blend of peppercorns, nutmeg, cinnamon, cloves and ginger that adds earthy depth and spice to a recipe. It is used mainly in France, but also appears in some Middle Eastern cuisines.
The name literally means four spices, although the mix tends to have five, or even six, different ingredients. In French cooking, it is typically used in soup, paté or sausage making. Its blend is typically heavy on the peppercorns with the other ingredients simply adding depth and balance.
