Pine nuts are the edible seeds of pine trees, found hidden within the tree’s pinecones. Also known as "piñon,” "pignoli," or “pignolia,” pine nuts have played a role in the culinary traditions of cultures around the world since ancient times. In fact, anthropologists have found evidence that humans have eaten these fragrant, richly flavorful nuts since the Paleolithic era. Pine nuts can come from a number of different species of pine trees, grown mostly throughout China, Italy, Mexico, North Africa, and the southwestern United States.
Harvested every autumn when they've reached full maturity, pine cones are given several months to dry out before they are cracked open and the pine nuts are collected. The raw pine nuts are then packed without being roasted or salted, so they are ready to be used in a wide variety of recipes or simply eaten as-is. Our Premium Raw Pine Nuts are larger than our standard Raw Pine Nuts.
Known as an essential component in classic Italian pesto sauce, pine nuts are also a key ingredient in Italian pignoli cookies and also appear in a number of Mediterranean and Middle Eastern dishes.
