The origins of the well-known Spanish rice dish paella are the subject of numerous tales. Some say that the Moorish kings' servants mixed the leftovers from royal banquets with rice in large pots, taking them home to their families. The more likely origin, however, is the fields of Valencia, a region on the eastern coast of Spain. There, field workers would make the rice dish at lunch time, cooking it in a large, flat pan over a fire and mixing in whatever they could find in the field, including rabbit, snails and vegetables. The finished dish would be shared amongst themselves, a way of stretching a little food to feed a lot of hungry people.
Today, paella is made in every part of Spain, and the ingredients that go into it are as varied as the regions and the cooks themselves. Seafood, chicken, rabbit, beans, peas, artichokes and peppers are all common. However, regardless of the ingredients used, saffron is absolutely essential.
